Recipe(tried): Turkey Salad with Cranberries

Hello Everyone,

Here is a delicious cold turkey salad that I made using one leftover side of turkey breast. It really turned out very, very good. The turkey breast yielded 5 cups of meat so you can imagine, it made quite a bit.

You can substitute turkey for white chicken meat.
This came out tasting like a famous turkey salad sold at a local gourmet market in town. They sell theirs for $7.99/lb. You can make it for a fraction of that!!

Gourmet Turkey Cranberry Salad

5 c. cooked turkey or chicken, chopped
1 c. chopped celery
1 c. dried cranberry (Ocean Spray)
1/2 of a 7 oz. can water chestnuts, drained and chopped
1/2 c. mayonnaise
1/2 c. sour cream
1 t. curry powder
1 T. lemon juice
1 t. grated onion
1/2 t. salt
1/2 t. black pepper

Put the chopped turkey meat in a large glass bowl and blend in the sour cream, mayonnaise, curry powder, lemon juice, salt and pepper. Blend in the grated onion. If you want it a bit "wetter", add a tablespoon of sour cream at a time til you get it to the consistency you want. (I added 3 extra tablespoons more and I also shredded the meat becausae I like it "deli" style).

Now add the celery, dried cranberries and water chestnuts and combine well. Cover and refrigerate. Great on a bed of lettuce, or on top of a cut up tomato or a sandwich!!
