This is our FAVORITE leftover turkey recipe--my kids love it and sometimes we bake a turkey breast just to have turkey for this recipe. It truly doesn't taste like "leftover" and is nice enough to have for company!!!! It warms up great in the microwave--I always make a lot so that there's leftovers of this to warm up. It's a great recipe--I serve it with broccoli and a nice salad.
1. Cook 1/2 pound linguini (follow regular directions to cook)
2. Saute 1/2 to 3/4 pound mushrooms (Add more or less to your taste)
3. Shred 2 - 3 cups turkey (chicken also works in this)
4. Make a sauce of: (I do this in the microwave.)
3 TBSP. butter or margarine
2 TBSP. flour
2 cups chicken broth
1 cup heated whipping cream--I frequently use 1/2 & 1/2 or sometimes have used milk
3 TBSP. dry white wine--I usually just use a little extra cream or milk
Melt butter. Add flour and cook a few seconds until bubbling. Add warm chicken broth. Beat with a wisk. Bring to a boil and boil for 1 minute. Remove from heat or microwave. Add cream and wine.
5. Put together by placing linguini, turkey, sauce, mushrooms in a casserole dish. Toss lightly to distribute sauce evenly. Add salt, pepper and parsley flakes to taste.
6. Bake at 350 for about 20 minutes until dish is lightly browned and bubbling. Don't overbake--just heat through.
