Recipe(tried): Turkey Hawaiian (using leftover turkey)

TURKEY HAWAIIAN
Here is one we enjoy with leftover turkey. You can omit the small onions if you cant find them and it is still good.
Serves 4

2 eggs beaten
1/2 cup flour
1/2 teaspoon salt
water
2 cups cubed cooked turkey
fat for frying
1 can (13 1/2 oounces) pineapple chunks
2 tablespoons cornstarch
1 tablespoon butter
1 tablespoon chicken-stock base
1 each green and red peppers cut into eighths
1 tablespoon soy sauce
1 can [8 ounces] onions drained (optional)
Sometimes I add a small can of mushrooms

Combine first 3 ingredients and add 3 tablespoons water, blend until smooth. Add turkey chunks and fry until golden. Drain and keep warm.

Drain pineapple juice into a saucepan. Blend in cornstarch, add butter, pineapple and remaining ingredients. Simmer for 5 minutes, stirring frequently. Add turkey chunks and serve at once over rice or Chinese noodles.
