Recipe: Ultimate Fish and Chips (fish fried on skewers with shredded potato coating)

1 potato, medium, washed and grated into long strands
1 egg, slightly beaten
1/4 cup all-purpose flour
2 teaspoons chopped chives
1 pound salmon or firm white fish, cut into 1-inch-by-2-inch pieces
Salt and pepper to taste
2 cups 100 percent canola oil, any brand
In bowl, combine grated potato strands, egg, flour and chives. Mix well.
Wrap 1 1/2 to 2 tablespoons of potato mixture around each piece of fish. Secure with long skewer. Let rest 15 minutes before frying.
Heat canola oil to 375 degrees F in deep fryer.
Fry skewers, a few at a time, for 1 to 2 minutes or until golden brown. Remove and drain on paper towels. Season with salt and pepper.
Makes 8 to 10 skewers
