Here is a list that I developed for you, but there are countless more ways in which you can use it. Thanks for asking my friend,
The Sofrito can be used in the following dishes, & many more:
for cooking the ground beef that you will serve as stuffing, or as Picadillo over white rice (Cuban dish), or as stuffing for the alcapurrias or stuffed potato balls; ground beef stuffing for Empanadas or the stuffing that you prepare for a chicken or a turkey.
I add Sofrito to the Caldo Gallego; to the Sancocho; to our version of Chicken Noodle Soup; to the Black Bean Soup; & to the Asopao de Pollo or Asopao de Camarones. Experiment with many other soups & you will see the change of flavor.
Also, add it to the Salt Cod Bilbaina Style, to the Enchilada de Langosta or Enchilada de Camarones; to the Bouillabaisse; to the Stewed Codfish, stewed chicken, beef, veal or any other kind of stew that you prefer. Also for the delicious Carne Mechada.
It should be added also to the Rice with Pigeon Peas; to the Chicken with Rice & I even add it to the Paella to add the freshness of the Sofrito flavor.
The Sofrito should be always added at the beginning of cooking your dish, as for example, you saut the chopped onion that you are adding to a dish until it is wilted & had changed the flavor to sweet & caramelized.
Another thing that I do is to add about a Tb of Sofrito to a Vinaigrette Dressing so that the vegetables are well processed & can incorporate better to the Sauce.
I know that Spaniards use their own kind of Sofrito (Sofregit in Catalu a) for their dishes, too.
