Recipe: Spicy Marinated Shrimp
Appetizers and SnacksSPICY MARINATED SHRIMP
2 lb cooked fresh shrimp,* peeled and deveined
1 large red onion, sliced
2 large lemons, sliced
FOR THE MARINADE:
1/2 cup olive or vegetable oil
1/4 cup wine vinegar
2 tbsp lemon juice
1 clove garlic , halved
1 bay leaf
1 tsp dry mustard
1 tsp crumbled dried basil
1 tsp salt
1/4 tsp black pepper
3 or 4 whole allspice
fresh parsley sprigs (for garnish)
Layer shrimp, red onion, and lemon slices in a medium bowl.
Combine oil, vinegar, lemon juice, garlic, bay leaf, dry mustard, basil, salt, pepper, and allspice in jar with a tight fitting lid; cover, shake thoroughly.
Pour marinade over shrimp; toss gently. Cover and refrigerate several hours or overnight.
TO SERVE:
Garnish with parsley sprigs. Serve with decorative picks.
*May substitute 1 1/2 lbs cooked frozen peeled deveined shrimp for fresh.
