V8 HEARTY VEGETARIAN CHILI
2 tablespoons vegetable oil
1 large onion, chopped
1 small green bell pepper, chopped
1/4 teaspoon garlic powder (or 2 cloves garlic, minced)
1 tablespoon chili powder
1/2 teaspoon ground cumin
2 1/2 cups V8 Vegetable Juice*
1 (16 oz) can black or kidney beans, rinsed and drained
1 (15 oz) can pinto beans, rinsed and drained
Heat oil in saucepan. Add onion, pepper, garlic, chili powder and cumin and cook until tender.
Add vegetable juice. Heat to a boil. Cook over low heat 5 minutes.
Add beans and heat through.
Makes 4 servings
