Recipe: The Ultimate Peanut-Butter Stuffed Celery (using cream cheese and scallions)
Appetizers and SnacksTHE ULTIMATE PEANUT-BUTTER STUFFED CELERY
"A stalk of celery smeared down its groove with a dollop of peanut butter has always been a popular kid's snack. This more grown-up version makes a great hors d'oeuvre that goes remarkably well with Bloody Marys."
3/4 cup crunchy peanut butter, at room temperature
1 (3 ounce) pkg cream cheese, softened
1 tablespoon Worcestershire sauce (or to taste)
tabasco sauce (to taste)
1/4 cup finely chopped fresh scallion greens
12 celery stalks, small to medium, trimmed and chilled
In a mixing bowl, stir together the peanut butter, cream cheese, Worcestershire sauce, and Tabasco until smoothly blended. Fold in the scallions.
With a knife, spread a dollop of the mixture down the groove of each celery stalk. Arrange the stalks on a tray or plate and serve immediately.
Servings: 6 as a snack or 12 as an hors d'oeuvre.
