Hi Sunny - this recipe for pumpkin bread is the best I've ever tasted - many quick bread recipes are too dry and flavorless for me, so I've used this recipe for years and it always gets good comments and requests for the recipe.
LAFAYETTE PUMPKIN BREAD
2 1/3 cup sugar
3/4 cup oil
1 (1 lb) can pumpkin puree (not pie filling)
4 eggs
2/3 cup water
Add to above and mix well:
3 1/2 cups flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. ground cloves
1/2 tsp. ground nutmeg
1/4 tsp. ground allspice
Preheat oven to 350 degrees F. Grease and lightly flour three regular size loaf pans, or one large loaf pan and one regular loaf pan.
Cream together sugar and oil. Add pumpkin, eggs, and 2/3 cup water and beat well. Add the flour, baking soda, baking powder, and spices and mix well. Place batter in prepared pan(s).
Bake in preheated 350 degree F oven for 1 hour or until done. After baking, loosen around edges of pan, and turn out on rack for cooling. Freezes well.
Hope this is as good as the Starbuck's you're requesting.
Makes three regular size loaf pans, or one large loaf pan and one regular loaf pan.
