VERMONT MAPLE COOKIES
1/2 c. shortening
1 c. brown sugar, packed
1/2 c. granulated sugar
2 eggs
1 c. commercial sour cream
1 tsp. maple syrup (or maple
flavoring)
2 3/4 c. flour
1/2 tsp. soda
1 tsp. salt
Mix shortening, sugars and eggs thoroughly with electric
mixer. Stir in sour cream and flavoring. In a separate bowl
mix flour, soda and salt. Still using mixer add dry ingredi-
ents a little at a time. If dough is soft, chill for a few
minutes. Heat oven to 300 degrees. Drop by teaspoonfuls onto
greased
cookie sheet. Bake 8 to 10 minutes. Cookies will be soft.
Frost with Maple Frosting.
Note: Instead of maple flavoring, you may use almond,
vanilla, etc.
Maple Frosting: Heat 1/2 cup butter until golden brown.
Blend in 2 cups confectioners sugar and 2 teaspoon maple syrup.
Stir in 2 to 4 tablespoons hot water until icing spreads
smoothly. If different flavoring is used in cookies, use the
same flavoring in the frosting. This frosting also colors well
with food coloring.
