Recipe(tried): Vidalia Onions and Cucumbers

Vidalia Onions and Cucumbers

3 cups peeled, thinly sliced cucumbers
1 1/2 cups thinly sliced vidalia onions
1/2 cup grated carrot
1/2 cup white vinegar
1/4 cup sugar
1 tbsp dried dillweed or 2 tbsp fresh
1/2 tsp salt
1/4 tsp pepper

Toss vegetables together. In small bowl combine vinegar,sugar,dill,2 tbsp water, salt and pepper. Pour over vegetables and toss to coat. Serve immediately, or cover and refrigerate until ready to serve.
