Recipe(tried): Vietnamese Salad Dressing (3 ingredients)

This is the most typical dressing used on Vietnamese salads. The recipe was taught me by a Vietnamese friend. These are the ingredients and method, but no exact proportions as each brand of fish sauce varies in intensity and saltiness.

Mix together sugar and lemon juice until the sugar dissolves. The taste should approximate that of lemonade base. Add fish sauce to taste. The balance of the dressing should be swet, sour, and salty, with that elusive flavor you mentioned.

If you'd like the dressing hot, add sliced fresh red chiles or a bit of Oriental chili sauce (such as chili paste with garlic or Sriracha sauce), again to taste.
