Recipe(tried): Ways with Shrimp - Shrimp with Garlic Sauce, Shrimp Toast

Good afternoon!Shrimp is on special this week at the grocery store so I stocked up ha!Into the deep freeze the excess shrimp will go.I'm thinking I will make these recipes for New Years Eve.We love Chinese food!(Especially the spicy stuff).These are a great buffet food.We'll be having a buffet style menu.You can cut the chili paste in half for moderate heat.Enjoy!

Shrimp with Garlic Sauce:
4 servings

6 dried black mushrooms
1/2 medium head cabbage
4 green onions(with tops)
1 medium carrot
3/4 lb.raw medium shrimp(in shells)
1 tsp.cornstarch
1 tsp.water
2 Tbls.vegetable oil
2 tsp.finely chopped garlic
2 Tbls.vegetable oil
1/4 c.chicken broth
1 Tbls.chili paste

Soak mushrooms in hot water 20 minutes or till soft;drain.Rinse in warm water;drain.Squeeze out excess moisture.Remove & discard stems;cut caps into thin strips.

Cut cabbage into 2&3/4 inch pieces.Cut green onions diagonally into 1 inch pieces.Cut carrots diagonally into thin slices.Place carrot in boiling water;heat to boiling.Boil 1 minute& drain.Immediately rinse in cold water,drain.

Peel shrimp.Cut shrimp lengthwise into halves,wash out vein.Pat dry with paper towels.Mix cornstarch & water.

Heat wok (or electric skillet)till very hot.Add 2 tablespoons vegetable oil,tilt wok to coat sides.Add shrimp & garlic,stir-fry till shrimp are pink.Remove shrimp from wok.

Heat wok(or electric skillet) until very hot. Add 2 Tablespoons vegetable oil,tilt wok to coat sides.Add mushrooms & cabbage,stir-fry 1 minute.Add broth,heat to boiling.Cover & cook 1 minute.Stir in cornstarch mixture,cook & stir 30 seconds or till thickened.Add shrimp,green onions,carrots & chili paste.Cook & stir 30 seconds or till shrimp are hot.

Shrimp Toast:
20 appetizers

1/2 lb.raw medium shrimp(in shells)
1/2 c.chopped green onions(with tops)
1/4 c.all purpose flour
1/4 c.water
1 egg
1 Tbls.cornstarch
1 tsp.salt
1/4 tsp.sugar
1/4 tsp.sesame oil
Dash of white pepper
Vegetable oil
5 slices white bread

Peel shrimp.Make a shallow cut lengthwise down back of each shrimp,wash out vein.Cut shrimp lengthwise into halves,cut each half crosswise into halves.Pat shrimp dry with paper towels.

Mix shrimp,green onions ,flour
,water,egg,cornstarch,salt,sugar,sesame oil & white pepper.

Heat vegetable oil(1 &1/2 inches)in wok or electric skillet to 350 degrees.Remove crusts from bread,cut each slice into 4 squares.Place 1 or 2 pieces shrimp with sauce on each bread square.

Fry 5 squares at a time,about 2 minutes or till golden brown,turning frequently,drain on paper towels.

Shrimp Toast can be cooked up to 3 hours ahead.Reheat in a preheated 425 degree oven for 5 minutes.These are so impressive & irresistable!Enjoy!
