CRAB AND BROCCOLI STRATA PIE
7 slices whole wheat bread, cut or torn into 1/2-inch cubes
1 ( 16 oz ) pkg. frozen cut broccoli, thawed and drained
1 ( 6 oz ) can crab meat, drained, flaked
2 cups milk
9 eggs
1 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
6 ounces ( 1 1/2 cups ) Cheddar cheese, shredded
Spray two 9-inch pie pans with nonstick cooking spray.
Layer half of bread cubes, broccoli and crab meat in each spray coated pan. In large bowl, combine milk, eggs, dry mustard, garlic powder and onion powder, beat well. Pour half of egg mixture evenly over crab meat in each pan. Sprinkle each with cheese. Cover with plastic wrap, refrigerate at least 6 hours or overnight.
WHEN READY TO BAKE:
Uncover pans, bake at 375 degrees F for 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes. Cut into wedges to serve.
RECIPE CAN BE PREPARED AND BAKED IMMEDIATELY:
Layer bread, broccoli and crab meat in spray coated pans as directed above. In small saucepan over medium heat, bring milk just to a boil. In large bowl, beat eggs, dry mustard, garlic powder and onion powder until well blended. Slowly stir in hot milk. Pour half of mixture evenly over crab meat in each pan. Sprinkle each with cheese. Bake at 375. for 30 to 35 minutes or until knife inserted in center comes out clean.
TIPS: To thaw broccoli, place in large colander or strainer Run warm water over broccoli for 1 to 2 minutes or until no longer frozen. Drain thoroughly.
