Weight Watchers Own 40th Anniversary Cake Recipe
Woodbury, NY - There won't be any skimping when Weight Watchers International, Inc. serves up slices of anniversary cake for its 40th year celebration on May 2.
To mark the occasion, Weight Watchers has devised a recipe for a lusciously moist chocolate cake with a flavorful raspberry cream filling - proof that you can enjoy cake and watch your weight, too.
Each slice seems decadent, but with only 6 POINTS per serving, each slice has half the POINTS of a slice of regular frosted layer cake. With their smart use of ingredients, Weight Watchers packs rich flavor and texture into every bite, while going easy on oil and sugar.
Weight Watchers 40th Anniversary Cake
Chocolate Cake with Raspberry Cream
1 package "moist" variety dark chocolate cake mix (19.5 oz package)
1 cup water
3/4 cup fat-free egg substitute
1/4 cup unsweetened applesauce
2 Tbsp vegetable oil
2 (9-inch) round cake pans
Using above ingredients and pans, follow cake mix directions for mixing and baking. Cool layers completely.
Raspberry Cream
8 oz container frozen light whipped topping, thawed
1/2 package fat-free, sugar-free vanilla pudding mix
1/2 cup fat-free milk
2 Tbsp confectioners' sugar
1 cup frozen raspberries, slightly thawed
1. Combine first 4 ingredients, mixing well until all ingredients are well blended.
2. Divide cream mixture in half. Reserve 8 raspberries for decoration and mix remaining raspberries into one half of the cream mixture, breaking up the berries as you blend. Cream will take on a pinkish tint.
3. Place one cake layer on cake platter. Cover top with 2/3 of the raspberry cream mixture, then top with remaining cake layer. Using remaining raspberry mixture, frost the top of cake, leaving a 1-inch edge unfrosted.
4. Using a pastry bag with star tip, pipe the remaining cream mixture in two rows onto the unfrosted edge of cake; decorate with reserved raspberries.
5. Serve immediately or refrigerate until ready to serve.
Makes 12 servings, 6 POINTS per serving: 273 calories, 8g fat, 1.2 g fiber
