Recipe(tried): White Chocolate Fudge Recipes

Hi,

Here are some great white chocolate fudge recipes that I use during the holidays. The first is just for plain white fudge, but the rest are great too. Hope these help.



White Chocolate Fudge

- 1 (8 oz) package cream cheese, softened
- 4 cups powdered sugar
- 1 1/2 teaspoons vanilla
- 2 cups white chocolate chips, melted
- 1 1/2 cups pecans

In bowl, combine first 3 ingredients. Beat with mixer on medium until well blended. Gradually add chocolate, mix well. Stir in nuts. Spread into greased 8" square pan. Chill.



White Chocolate Candied Fudge

- 6 oz package premium white chocolate chips (18 oz)
- 14 oz can Eagle sweetened condensed milk
- 1 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/2 cup chopped green candied cherries
- 1/2 cup chopped red candied cherries

Over low heat, melt chocolate with Eagle Brand, vanilla and salt. Remove from heat; stir in cherries. Spread into foil-lined 8 or 9" square pan. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off foil and cut into squares. Store covered in refrigerator.

Variations:

Rum Raisin White Fudge - Omit vanilla and cherries. Add 1 1/2 teaspoon white vinegar, 1 teaspoon rum flavoring and 3/4 cup raisins. Proceed as above.

Toasted Nutty White Fudge - Omit cherries. Add 1 cup chopped toasted nuts. Proceed as above.



White Christmas Fudge

- 2 1/2 cups Domino Confectioners Sugar
- 2/3 cup milk
- 1/4 cup butter or margarine
- 12 oz white chocolate, coarsely chopped
- 1/2 teaspoon almond extract (optional)
- 3/4 cup dried cherries, cranberries, or apricots, coarsely chopped
- 3/4 cup toasted almond slices

Line an 8" square pan with foil; grease foil. Mix confectioners sugar and milk in a heavy 3-quart saucepan. Over medium heat, add butter and stirring constantly, bring to a boil. Without stirring, boil constantly for 5 minutes. Over low heat, add chocolate and almond extract. Stir then whisk until chocolate melts and mixture is smooth. Stir in dried fruit and toasted almonds. Pour mixture into prepared pans. Refrigerate 2 hours until firm. Invert pan, peel off foil and cut into 1" squares.



White Layered Chocolate Fudge

- 2 packages (8 squares each) semisweet chocolate squares
- 1 can (14 oz) sweetened condensed milk
- 2 teaspoons vanilla
- 1 1/2 cups chopped walnuts
- 6 squares white chocolate squares
- 1/2 cup sweetened condensed milk

Microwave chocolate and milk in large microwavable bowl on high for 2 to 3 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir until chocolate is completely melted. Stir in vanilla and walnuts. Before refrigerating fudge, melt 6 squares white chocolate as directed on package. Stir in 1/2 cup sweetened condensed milk. Spread in foil lined 8" square pan. Refrigerate 2 hours or until firm. Cut into squares. Yield: 4 dozen
