Recipe: Winter Vegetable Chili (no meat, using squash and stewed tomatoes)

2 tbsp. oil
1 medium onion, chopped
1 medium green bell pepper, chopped
1 stalk of celery, diced
1 1/2 cups peeled butternut squash, cubed
1 (19 oz.) can stewed tomatoes
1 (14 oz.) can kidney beans
Heat oil in large saucepan over medium heat. Cook and stir onion, green pepper, celery and squash for 5 minutes.
Stir in tomatoes and undrained kidney beans. Bring to boil; simmer 5 minutes longer or until vegetables are tender.
Makes 4 servings
