Recipe(tried): Real New Mexican Red Chile

REAL NUEVO MEXICO CHILE

1 pound ground beef, ground pork (course) or round steak
3 tablespoons lard
3 tablespoons flour
1/2 cup powdered red chile or 1 cup chile puree
salt and garlic to taste
pinch of oregano (optional)
3 to 4 cups water

Start by frying the meat in a skillet large enough to accommodate all the ingredients. Once meat has been cooked all the way through, drain grease and move all meat to side of skillet.

On the other side of skillet melt the lard. Fry the flour in the lard until it has turned a pretty chocolate color. Mix in with the meat.

Pour red chile powder or puree onto meat. Add salt, garlic, and oregano. Add 3-4 cups water; stir. Boil for 45 minutes to an hour stirring occasionally to keep skin from forming.

Then enjoy!
