Recipe: WONDERFUL divinity recipe
Misc.I have a wonderful recipe for divinity fudge. I got it from my kitchenaid cookbook that came with my mixer which I LOVE! Divinity is difficult to make mostly because it takes a lot of strength to beat by hand. My mother used to do it this way and it took forever. Divinity is finicky to make and has to beat just so to make it come out light. Best made on a warm day, low humidity, otherwise it never sets up. When I make it I double the recipe and pour it into a wax paper lined jelly roll pan.
3 cups sugar
3/4 cup light corn syrup
1/2 cup water
2 egg whites
1 tsp. almond extract
1 cup chopped nuts
Place sugar, corn syrup, and water in heavy sauce pan. Over medium heat, cook to hard ball stage (248 degrees). Remove from heat and let stand until temp. drops to 220 degrees WITHOUR STIRRING!
Place egg whites in bowl. Attach bowl and wire whip. Turn to speed 8 and whip until soft peaks form, about 1 minute. Gradually add syrup in a FINE stream,
taking about 2-1/2 minutes to pour. Reduce to speed 4 and add almond extract. Continue whipping 20 to 25 minutes or until mixtuee starts to become dry. Turn to stir speed and add nuts, mixing just until blended. Pour into prepared pan.
