Recipe(tried): Yoghurt Cheese as Mayo Sub

Hi Betty, have you ever tried yoghurt cheese? Take a pot of yoghurt and dump it into cheescloth, or a coffee filter or similar, set in a strainer, and then over a bowl, and let it drain for several hours - the longer you leave it the firmer it gets.

From there you can flavor it as you like. I find the plain quite tart, and often use vanilla yoghurt.

It really does not taste like yoghurt anymore, and is very versatile.
