BRAN-FLAX MUFFINS
1 1/2 cups unbleached white flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 1/2 cups shredded carrots
2 apples, peeled, cored and shredded
1/2 cup raisins
1 cup chopped nuts
3/4 cup milk
2 eggs, beaten
1 teaspoon vanilla extract
Preheat oven to 350 degrees F. Grease 15 muffin cups or line with paper liners.
Mix flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts.
In a separate bowl, combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix. Fill muffin cups 3/4 full.
Bake for 15 to 20 minutes.
Makes about 15 muffins
