YOGURT ORANGE BREAD
1/2 cup margarine, room temperature
1 1/2 cups sugar
2 eggs
1/2 cup plain lowfat yogurt
4 teaspoons grated orange rind
1/2 cup orange juice
2 1/4 cups sifted flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350 degrees F. Coat a 9x5x3-inch loaf pan* with non-stick spray.
Cream together margarine and sugar; add eggs, yogurt, orange rind and juice, beating until smooth. Mix in flour, baking powder and salt. Pour batter into prepared loaf pan.
Bake at 350 degrees for one hour or until center springs back when lightly touched. Cool in pan on wire rack for 10 minutes, then remove from pan.
*Three small loaves may be made by using three 6-inch pans (reduce baking time as necessary).
