Recipe: Sweet Cinnamon Tofu Dip

For dipping fresh fruit or for topping pancakes or waffles, this versatile dip adds all the nutrients of soy and tastes delicious. If can also be used to wake up an otherwise boring English muffin or slice of whole wheat toast.
1 (10-ounce) package reduced-fat silken tofu (Look for Mori-Nu brand available in aseptic packages in the produce section of many large grocery stores.)
1 tablespoon maple syrup
1 tablespoon firmly packed brown sugar
1/8 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
2 drops lemon extract
Place tofu in a blender container and blend until smooth. Spoon into a small bowl. Add remaining ingredients, mixing well.
Chill several hours to blend flavors.
Quick tip: Keep a few packages of tofu in the refrigerator so it will always be handy for dips or puddings.
Makes 1 cup
Each tablespoon provides: 15 Calories, 1g Protein, 0g Total fat (0 g Sat. fat), 2g Carbohydrate, 16 mg Sodium, 0 mg Cholesterol
