Yorkshire Popovers
beef fat -- melted
1 cup flour
2 tbsp flour
1 cup milk
4 eggs
1 tsp salt
1/4 tsp nutmeg -- grated
1/8 tsp ground pepper
Preheat oven to 400F. Place muffin tin in shallow roasting pan and half fill each cup with melted beef fat. Bake until fat starts to smoke, about 15 minutes. Meanwhile, combine flour, milk, eggs, salt, nutmeg, and pepper in medium bowl. Beat until consistency of whipping cream. When beef fat is ready, brush up sides and top of muffin tin. Half fill each cup with batter (fat will spill over sides into baking pan below). Bake for 25 minutes without opening oven. Reduce oven temperature to 375F and continue baking until popovers are brown and sides are firm, about 10 to 20 minutes.
