ZUCCHINI BAKE
1 cup Bisquick baking mix
1/2 cup grated Romano cheese
1/4 tsp salt
dash Italian seasoning
4 eggs, slightly beaten
2 tbsp chopped fresh parsley
1 clove garlic, minced
3 cups thinly sliced zucchini
1/2 onion, chopped
Preheat oven to 350 degrees F. Coat a 13x9x2-inch baking pan with cooking spray.
In a large bowl, stir together Bisquick, cheese, salt, and Italian seasoning. Mix in eggs, parsley, and garlic. Stir in zucchini and onion. Pour into prepared pan.
Bake in a 350 degrees F oven for 30 to 40 minutes.
