Recipe: Walnut and Herb-Crusted Chicken

WALNUT AND HERB-CRUSTED CHICKEN

3/4 cup walnuts, finely chopped
1/4 cup plain bread crumbs
1 1/2 teaspoons basil leaves
3/4 teaspoon rosemary leaves
2 tablespoons flour
1/2 teaspoon salt
1 egg
2 1/2 pounds chicken pieces, skin removed

Preheat oven to 350 degrees F.

In a shallow dish, combine walnuts, bread crumbs, basil, rosemary, flour and salt.

In second shallow dish, lightly beat egg.

Roll chicken in egg, then in walnut mixture.

Bake at 350 degrees F for 40 to 4 minutes until crust is browned.
