ZUCCHINI WHOOPIE PIES
1 cup grated zucchini
1 cup sugar
1/2 cup vegetable shortning
1 large egg
2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp salt
1/2 tsp cloves
1/2 cup milk
1 tsp vanilla
1 cup chopped nuts
Preheat oven to 375 degrees F. Lightly grease a cookie sheet.
Mix together the zucchini, sugar, shortening, and egg.
Sift dry ingredients together and add to the creamed mixture alternately with the milk; combine until smooth.
Stir in vanilla and nuts (if using). Drop by tbsp. onto prepared cookie sheet.
Bake for 9-10 minutes at 375 F. When cool fill with cream cheese filling. Keep refrigerated after filled.
FOR THE FILLING:
1 lb. confectioner's sugar
1 (8 oz.) pkg. cream cheese, room temperature
3 tbsp. butter, room temperature
2 tsp. vanilla
Combine all filling ingredients and beat until smooth.
