ISO: 3-layer Apricot Bars or Squares (1960's)
Misc.ISO a recipe my mother had written down, i.e. not in a published book. She first made these Apricot Bars/Squares in the late 1960s.
They were made with three layers. The bottom layer was a shortbread type crust. The next layer had chopped apricots (dried which had been soaked or steamed and then chopped) and may also have included nuts (probably pecans or walnuts), eggs, and sugar. The top layer was a meringue.
The bars were baked after each layer was added.
Please note: This recipe does not include oatmeal or coconut.
My mother also made these with drained pineapple in lieu of apricots. I don't know if that alteration was suggested by the recipe or if it was her own variation. Thank you in advance for checking your recipe files.
