ISO: 300 chicken filled cream puffs

I am making 300 chicken filled cream puffs for a wedding in a couple of weeks and I need a good simple recipe for the chicken salad and quick and easy ideas on how to fill the cream puffs and how to transport them without smashing them. Thanks
