ISO: Advice on peeling potatoes ahead

Help! As part of our Christmas dinner, I need to mash 15 lbs of potatoes. I'm not peeling 15 lbs of potatoes on Christmas morning if I can help it! I know peeled potatoes can be held, covered in cold water, for a while. Does anyone know if I can hold them for as long as 24 hours? At what point does refrigeration become necessary? I'm planning on doing regular mashed potatoes, not one of the make-ahead potato casseroles, because DH's family doesn't seem to like those at all. Weird, I know, but that's family. Anyway, I'd rather spend Christmas morning with the kids, not the potatoes, so any help will be appreciated!
