ISO: re: Advice on soaking peeled potatoes - I agree...

I agree with her on the soaking, and IF I were do soak them that long, I'd change the water often. Soaking also removes the potassium in the potatoes too. I'd cook them ahead of time and reheat them in a pan on the stove top. It makes them taste like fresh made again.
