ISO: Beef Roast in a roaster oven

Hi,

I also like my Nesco, but have only roasted turkeys in it. I would like to do a beef roast one about 5 or 6 pounds.

What is the best type of roast to use? Mine is an older model but still works good. The book that come with it is not to clear on roasting a beef roast. Also at what point do you add potaotes and carrots. What is the best temperature to use and for how long?
Any help you could give me would be appreciated. Since I am having company I don't want to goof it up. Thanks
