ISO: Corned Beef Tongue
Misc.A son and I would like to know how to corn a beef tongue. We have found a couple of recipes for the brine, but are stuck with the idea of "when does one put it in the brine?" In my experience, one has to cook it well for the skin to come off - can the brine penetrate the skin if one brines it and then cooks it? I grew up with tongue and the sandwiches and all my boys love it, too. Corning would be a delicious new way to serve it, we think.
