Recipe: Corned Beef Tongue - question
Misc.This says to me that you corn the tongues before cooking at all. My concern is that I know the skin won't come off until the tongue is cooked and then, if you soak it in brine and have to cook it some more, it will be mush.
BTW, I enjoy Penzey's spices - and there is a store over the river in Portland. ;^)
