Misc.I appreciate your message. Now, with an already cooked and skinned tongue, how long did you keep it in the brine? And, did you steam it for the hour after corning? Did you use sodium nitrate? I see that Morton's Tender Quick is an alternative, but I have no idea if it's available in Tokyo. Thanks for your input. Jan P
