ISO: desserts made ahead

I'm having my twins baptism party end of July. It's pretty hot in here!
A professional cook will make lunch but as I love baking and I'm good at it I would like to make the desserts myself. I need to make them ahead and preferably freeze them or chill two or three days before.
I'm looking specially for cakes or tarts recipes because I already decided to serve Mango Mousse and Brownies with Ice cream and chocolat sauce.Can anyone help me?
