ISO: Elegant but simple dinner party recipes

Misc.
I love to entertain but don't always have the time to do things that require hours of work. Taste, appearance and ease in preparation are important. Live in a small city that doesn't always carry the real unusual ingredients. Any help woudl be greatly appreciated.
