ISO: fresh coconut cake

My Dad loves the fresh coconut cakes that do not use the seven minute or cream cheese frosting. No one makes them like this anymore. They are so moist and the cake seems to just have coconut on top and sides for frosting.

Thses are the kind my grandmothers used to make many years ago. Grated real coconut. I would love to make this for my Dad. I've found many, many recipes for the cake part. I need the filling and topping. Thanks!!!!
