ISO: Fresh Organic Black-eyed Peas

I need information on how to cook fresh black-eyed peas and purple hull peas. These are fresh not dried. Is soaking still required? If so, for how long? What are some good healthy seasonings? I am cooking for a cancer patient. Thank you so much to anyone who can help me.
