ISO: Ground Liver / Barley
Misc. I have a food memory from childhood that I must see if I can recreate. As a child I lived in south central Minnesota (lot's a Pennsylvania Dutch and German immigrants). My grandmother made a dish she called "liver sausage" though it was never in a casing...always just ground and frozen for use during the winter. I know it was pork liver, onions, barley and spices. The liver was cooked in the pressure cooker, ground and added to cooked barley. Grandma put it in containers for freezing and when we wanted some simply plopped it in the frying pan and browned it a little.
Can anyone help me find a recipe for this and what exactly the name of it is? I'd be eternally grateful and then I can "finally" move on from this nagging food craving.
Thank you very much.
