ISO: Instant pudding variations

Since Jello Sugar Free Puddings only come in a very few flavors, I am really in need of a way to make both coconut creme and lemon puddings using either instant or cooked vanilla sugar free puddings. Any ideas would be greatly appreciated. Thank you.
