ISO: looking for hints with Japanese cooking

Hi all you cookers! I am new to this community of practice, and eager to join!
I am currently working on my masters degree and am researching Japanese cooking because I LOVE IT so much. Also, my companion is vegetarian and I am trying to coerce him into something other than Italian and Mexican. Any help or ideas would be wonderful!
