Japanese vegetarian cuisine

Hi Jody,

There is a style called "shojin-ryori", which is one of the earliest Japanese cuisine, and it's completely vegan because it's the Zen Buddhist way of eating (no animal and animal-based ingredients). Seppo, a frequent poster here and a Buddhist monk himself, recently published his cookbook which would be an excellent source for you. Another book I highly recommend is "Zen Vegetarian Cooking" by Soei Yoneda.
