ISO: Miller & Paine crumb cookies - question

I haven't made the crumb cookies as couldn't find the recipe until just the other day. I used to buy a dozen and by the time I got home, I put a good dent in them. But I can't figure out the cake crumbs. Are they very dry, or fresh cake. I know the lady in the store told me they were day old cakes. I wouldn't think they would be dry enough to crumb. I would go to the tea room, have mac and cheese, a cinnamon roll and then go buy my cookies. Oh boy, did I pig out.
