PECAN PATTIES
"A pecan filled confection made with any pudding flavor."
1 package (3 1/4 oz.) Jell-O Coconut Cream or Vanilla or (4 oz.) Butterscotch, Chocolate, or Chocolate Fudge Pudding and Pie Filling (not instant)
1 cup granulated sugar
1/2 cup firmly packed brown sugar
2/3 cup evaporated milk
2 tablespoons butter
1 1/2 cups pecans (halves or broken pieces)
Combine JELL-O Pudding, sugars, milk, and butter in a saucepan. Cook and stir over low heat until sugar dissolves and mixture comes to a boil. Continue to boil gently, stirring often, until a small amount forms a soft ball in cold water (or to a temperature of 234 degrees F.). Remove from heat.
Add pecans. Beat just until mixture begins to thicken. (It will not be necessary to beat when using chocolate or chocolate fudge pudding.)
Drop by tablespoonfuls onto wax paper, making each patty about 2 inches in diameter. Let stand until firm, about 1 1/2 hours.
Makes 18 pecan patties
