ISO: Pancho's Mexican Buffet Sour Cream Enchiladas

I, too, am looking for that recipe. They were my favorite at Pancho's. I have tried to recreate that recipe many times, and have fallen way short. I know it had cloves, and cornstarch for thickening. But I can't place the main flavor that made it red. I've tried tomato based sauced, and it's nothing like it.
