ISO: pickled jalapeno rings question

My husband grows hot peppers, this year is jalapenos. We canned slices a couple of years ago but they didn't turn out as hot as the ones that you buy canned in the store. Are we using too much vinegar? Any one have a tried recipe that rivals commercially processed slices? Nothing fancy, don't need carrots or onions etc... just the peppers. A quick responce please, I have a 5 gallon bucket full that needs to be processed.
