ISO: Pineapple fruit tree

I am having a Luau 30th b-day party for my husband. I was recently at a graduation that had a pinapple fruit tree. It was a pinapple standing upright with assorted cut fruit stuck into to the pineapple with toothpicks. I just don't know exactly how to make it. They gave me the base and dowl that holds the pineapple in place, but I do not know if I use a whole pineapple or carve out before putting it on the dowl. Please advise if you have done it before.
