ISO: Pizza dough/base question.........

I made a mistake last night and let my dough proof twice, then tried again to
proof it, accidently set my bread maker for the dough to be ready at 2.00pm
instead of 3.30pm, so when I got to it, it was poof up, so I knocked it down
(this was the second proofing) and tried to re-proof it. Well, I ended up
putting it on top of my dryer for some heat for 10 mins, gave up and the family
said it was the best crust I have done! When you go to the pizza shop they have
their dough sitting there, they roll it out, put on the filling and then put it
in the oven, they dont proof it again. My question is, can I proof it twice,
then roll it out, put filling on it, then bake it? I have always proofed it
once, rolled it out, proofed it again, then put the filling on and baked it.
