Hi Don,
Here's a recipe I found once again in the "old" Better Homes and Gardens
Cookbook. Enjoy!! Will keep looking for catfish and monkfish recipes.

Salmon Steaks
4 salmon steaks, 1 inch thick
1/3 cup butter, melted (probably could substitute margarine for lower fat)
1 tsp worcestershire sauce
1 tsp. grated onion
1/4 tsp paprika


Place steaks in a shallow baking pan. Blend remaining ingredients, brush
some lightly on salmon. Sprinkle with salt. Bake at 350 for 25 to 30 minutes.
Pass remaining sauce.

If you're only making 1 salmon steak, cut the ingredients down or refrigerate
remaining sauce.
